Key Responsibilities
The Culinary Training & Development Manager is responsible for developing and executing the ship's overall culinary training strategy.
* Develop a comprehensive training plan that aligns with the company's service standards and operational practices.
* Ensure all culinary crew members understand and deliver the required standards, materials, and rating systems.
Collaboration with Senior Culinary Leadership:
* Work closely with Executive Chef and Executive Sous Chef to identify crew members with potential for career advancement.
* Assist in evaluating crew members who may not meet required skill set or attitude and determine their future role within the team.
Coaching & Staff Development:
* Provide ongoing coaching on company standards and best practices to all culinary employees.
* Conduct regular role-play sessions and hands-on training at workstations.
* Offer constructive feedback during coaching sessions and performance audits.
Training Scheduling & Reporting:
* Create daily training schedules and reports, presenting them to Executive Chef.
* Organize daytime training sessions (45 minutes per group) on port days, ensuring relevant data informs participant selection.
* Conduct nightly follow-up performance audits and provide feedback to crew members and Executive Chef.
Performance Audits & One-on-One Coaching:
* Conduct performance audits and coaching sessions on sea days, providing feedback to both crew members and management.
* Identify low performers and work with Executive Chef to create improvement plans for additional training or support.
Mentorship for Senior Staff:
* Coach and mentor senior staff on effectively conducting training sessions, including setup, session flow, feedback delivery, and evaluation.
