Chef Tournant Position Overview
The Chef Tournant plays a critical role in ensuring the success of our culinary operations. Reporting directly to the senior leadership team, this individual will be responsible for overseeing the day-to-day activities of the kitchen, including menu planning, inventory management, and staff supervision.
Main Responsibilities:
* Directs, coaches, and evaluates all direct reports to ensure they are meeting performance expectations.
* Maintains high standards of food quality and consistency by adhering to company recipes and guidelines.
* Coordinates team members, assigns tasks, and delegates responsibilities to optimize kitchen efficiency.
* Undertakes daily recipe reviews and maintains accurate records of menu items and ingredients.
* Follows up on requests from supervisors or managers to ensure timely resolution.
* Monitors production levels and recommends improvements to reduce costs and increase productivity.
* Oversees main kitchen sections and food production to ensure seamless execution.
* Maintains public health standards and ensures compliance with regulatory requirements.
* Prepares for inspections and audits to ensure company rules and regulations are met.
Qualifications and Requirements:
* A minimum of 5 years of experience in an upscale hotel or cruise ship environment, preferably with at least 2 years as a Chef Tournant.
* A culinary school degree is required, with strong emphasis on management, communication, problem-solving, and interpersonal skills.
* Superior customer service, teamwork, and conflict resolution skills are essential for success in this role.
* Strong knowledge of quality service standards, alternative delivery systems, and guest satisfaction evaluation techniques is necessary.
* Intermediate computer software skills are required for efficient record-keeping and reporting.
* A good understanding of basic accounting principles is also beneficial.
* The ability to write clear and concise reports and establish strong relationships with senior officers and the corporate office is crucial.
